„Ardei umpluţi“ is Romanian for "stuffed peppers". Ardei umpluţi, in the Romanian cuisine, are usually prepared with bell peppers (or a similar species) stuffed with ground meat, usually pork, rice, onion and other vegetables and spices. The peppers are stuffed with the ingredients and then baked in a rich, tomato based sauce.
The Romanian „ciorbă de burtă“ is similar to „ciorbă de ciocănele“ (soup from chicken legs). Ciorbă de burtă is often seasoned with vinegar and sauce of crushed garlic mixed with a little bit of oil, called mujdei.
„Ciorbă de perişoare“ is a Romanian traditional sour soup with meatballs. Perişoare are meatballs usually made with minced pork's meat, mixed with rice and spices and boiled in a ciorbă.
„Cozonac“ is a traditional Romanian sweet bread, to which milk, sugar, eggs, butter and raisins are added. It is usually prepared for Easter.
„Fasole bătută“ or „Fasole făcăluită“ (literally mashed beans) or icre de fasole (roe of beans) is a beans-based paste. This dip is traditionally made by mashing boiled beans and mixed with vegetable oil adding some chopped onions. Some recipes call for garlic, chili pepper, lime/lemon juice and/or additional seasonings.
This vegetarian dish is eaten during lent.
"Fasole cu cârnaţi" is a very popular Romanian dish, consisting of baked beansand sausages. A variation replaces the sausages with afumătură (smoked meat).
„Mămăligă“ is a porridge made out of yellow maize flour, traditional in Romania and Moldova. Historically a peasant food, it was often used as a substitute for bread or even as a staple food in the poor rural areas. However, in the last decades it has emerged as an upscale dish available in the finest restaurants.
„Murături“ are Romanian pickles. Murături are made out of beetroot, cucumbers, green tomatoes (gogonele), carrots, cabbage, bell peppers, melons, mushrooms, turnips, celery and cauliflower.
„Salată de boeuf“ is a traditional Romanian dish, generally served during all festive and special occasions. It is a combination of finely chopped beef or chicken and root vegetables, folded in mayonnaise and finished with murături, pickled vegetable garnishes. The dish is usually made up in large quantities for the whole party like Christmas eve. It's eaten as a side dish/salad to fried meats or as an appetiser/entree. Slight differences exist in quantities and these vary according to taste.
„Salată de vinete“ (Eggplant salad) is a Romanian mashed eggplant salad made of grilled, peeled and finely chopped eggplants, sunflower oil and chopped onions.
„Sarmale“ is a savory dish of grape, cabbage or chard leaves rolled around a filling usually based on minced meat. It‘s a traditional meal for Christmas and other religious holidays.
„Socată“ is a traditional Romanian soft drink made from the flowers of the European elder (or elderberry) shrub, Sambucus nigra (soc in Romanian).
„Tochitură“ is a traditional Romanian dish like a stew made from beef and pork in tomato sauce, traditionally served with over-easy eggs and mămăligă.
"Țuică" is a traditional Romanian spirit that contains 45%-60% alcohol by volume (usually 52%). It is usually made from fruits.
„Zacuscă“ is a vegetable spread very popular in Romania. The main ingredients are roasted eggplant or cooked beans, roasted red peppers and chopped onion.
